Susan Elsbeth Knittel

Susan Elsbeth Koski Knittel, 69, of Kannapolis, passed away peacefully surrounded by love and peace on Friday January 2, 2026.

Susan was born on May 29, 1956, in Ohio. She found joy at the Sport Center, a place that became her second home. Susan spent countless hours swimming, boxing, and taking part in the many classes and activities offered. The people she met there became like family, and those relationships meant the world to her.

Susan was endlessly creative and expressed that creativity through baking and cake decorating. Her artistic spirit also shined through her small business, Whims Beneath My Wings, where she crafted and sold handmade items whenever inspiration struck.

Susan found happiness in simple pleasures, especially visits to the Donut House and anything involving chocolate. These small joys reflected her ability to appreciate life’s sweetness. She will be dearly missed by all who knew her.

Those left to cherish her memory include her daughter, Lisa Weeder (Jerry); son, David Knittel (Amy); grandchildren, Tyler, Gavin, Lucas, Emma, Ella, Isabella, Natlie, and Louie; and all her friends at the Sports Center who were like family to her.

A memorial service to celebrate Susan’s life will be held at 1:00PM on Sunday, January 18, 2026, at Jackson Park Baptist Church with Rev. J.R Beaver officiating
